Personal Pizzas



What’s easier than calling Pleasant Ridge Pizza for delivery? Making English muffin pizzas yourself!  These personal size pizzas take five minutes to put together and are perfect for when you need a quick meal before running out the door to class.  Cheap and very easy, these muffins are a perfect alternative to your local pizza place when you’re pressed for time or just simply too lazy to pick up the phone and order.

English Muffin Pizzas

Serves 1
  • 1 English muffin
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup tomato or marinara sauce (whatever you have in the fridge, either works great!)

Open the English muffin and evenly distribute the tomato sauce on either half.  Do the same with the mozzarella and place directly on top of the sauce.  Place both halves in a toaster oven until cheese is completely melted.  If you don’t have a toaster oven in your dorm or apartment, a microwave works just as well!  Cook the English muffins in the microwave in thirty second increments until cheese is melted.
What’s also great about these is that you can add as many toppings as you like to make them more interesting.  Whatever you have in your fridge that you think would be great on pizza, pile it on!  Pepperoni, vegetables, more cheese, leftovers…no one is judging.

  1. toast the muffin a little before adding the pizza sauce. Add the pizza sauce to the lightly toasted english muffin, sprinkle with garlic powder then some mozz and top with a sprinkle of oregano and some parmesan :) stick it under the broiler or in a 350 oven for a couple minutes. Pizza English Muffins are THE BEST college student meal <3
